Preheat oven to 375 F.
Line a baking tray with parchment paper
Add all wet ingredients except the egg whites into a bowl and mix until combined.
Add and combine all dry in another bowl.
Add egg whites and xanthan gum to a large bowl. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form. This will take a few minutes. You can tell it is done when you can turn the bowl upside down without the batter spilling.
Make a hole in the middle of the egg whites and pour in the wet and dry ingredients.
Fold in the dry ingredients, do not over mix. It is better that there are some lumps in the batter than over mixing it.
Let sit for 3 minutes
In a small bowl, add some water.
Dip your hands into the bowl of water, and grab 1/6th of the dough. Place it on the parchment paper. It will be sticky!
Shape into a bagel by creating a hole in the middle and stretch the dough around. After it has the right shape, dip your fingers in water and smooth over to create a smooth surface. This will help any bagel seasoning stick on.
Top with your favorite bagel seasoning.
Bake in the preheated oven for 15-20 minutes.
