Easy Chicken for Lettuce Wraps

Don't forget to buy the lettuce. Romain or butter lettuce works very well. Serve by sprinkling over thinly sliced green onions and shredded carrots.
I love to serve it with shredded carrots. Make it fancy by mixing 60-gram shredded carrots with 15-gram rice vinegar and 3-gram sesame oil! Can add things like chopped unsalted cashews

Ingredients
  

  • 450 gram Chicken Breast
Sauce
  • 40 gram Hoisin Sauce
  • 90 gram/ml Sodium Soy Sauce
  • 5 gram Honey
  • 8 gram Sriracha
  • 15 gram/ml Rice Vinegar
  • 0.5 tsp Ginger
  • 1 can Water Chestnuts
Toppings
  • 1 bunch Green onions/scallions or shredded carrots.

Equipment

  • 1 Slow Cooker

Method
 

  1. Place chicken breast in a single layer in the slow cooker.
  2. Add half a cup/ 118 gram water or broth over the chicken.
  3. Cook on high for 3-4 hours or on low for 4-6 hours.
  4. Put the chicken breast in a big bowl or on a cutting board. Shred using two forks.
  5. Dice the water chestnuts.
  6. Mix all sauce ingredients together.
  7. Combine the sauce well with the shredded chicken.
  8. Serve over washed and dried romaine lettuce leaves or butter lettuce.
