Chicken Tikka Masala in the Slow Cooker

Chicken Tikka Masala often uses chicken thighs. In this recipe, you can use chicken breast thanks to the slow-and-low cooking method of using a slow cooker. The meat then becomes more flavorful and tender while being lean.

Ingredients
  

  • 900 gram chicken breast
  • 110 gram onion
  • 3 cloves garlic
  • 4 gram fresh ginger
  • 2 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 0.5 teaspoon Kashmiri red chili powder or cayenne pepper or
  • 0.5 teaspoon ground coriander
  • 28 oz (1 can) crushed tomatoes
  • 5 gram salt
  • 170 gram light coconut milk
  • 1 handful fresh cilantro, for garnish

Method
 

  1. Cut onion, mince garlic, and grate the ginger.
  2. Place a skillet over medium heat.
  3. Spray with non-stick spray and add the onion, cook for 4 minutes.
  4. Add the garlic, fresh ginger root, and dry spices. Cook for another 4 minutes.
  5. Stir in the crushed tomatoes.
  6. Add the sauce to the chicken breast in the slow cooker.
  7. Cook on low for 6-8 hours or high for 3-4 hours.
  8. Stir in the coconut milk.
  9. Serve over your favorite side dish topped with cilantro.

Notes

For an authentic tikka masala add 0.25 tsp cardamon to the spice mix.
