Cherry Jam - Sugar Free

Ingredients
  

  • 560 gram Cherries - Sweet Cherries measure after pitting
  • 7 gram Sure-Jell Premium Fruit Pectin for Less or No Sugar Needed Recipes Optional but helps thicken jam
  • 150 ml/gram Water
  • 10 ml/gram Lemon juice
  • Optional: Sweetener equivalent to 70 grams sugar such as Stevia or other sugar substitutes; adjust according to taste I do not use any

Method
 

Prepare the Cherries:
  1. Wash the cherries thoroughly.
  2. Pit and chop the cherries into small pieces.
Cook the Cherries:
  1. In a large pot, combine the chopped cherries and the water to the pot.
  2. Gradually stir in the pectin.
Boil the Mixture:
  1. Bring the mixture to a boil over medium-high heat, stirring constantly.
  2. Once it reaches a rolling boil (a boil that doesn’t stop bubbling when stirred), boil for 5 minutes, continuing to stir.
Sweeten (Optional):
  1. If using a sweetener, add it now and stir well to combine.
  2. Return the mixture to a boil and boil for an additional minute.
Check for Doneness:
  1. The jam will thicken as it cooks. To check if it’s done, place a small amount on a chilled plate. If it wrinkles when pushed, it's ready. Once nearly done, add lemon juice.
Cool and Store:
  1. Remove the pot from the heat and let the jam cool slightly.
  2. Transfer the jam to clean, airtight containers.
  3. Let the jam cool to room temperature before sealing the containers.
  4. Store the jam in the refrigerator. It will continue to thicken as it chills.
Tips:
  1. This jam will keep in the refrigerator for up to 3 weeks.
  2. You can also freeze the jam for longer storage. Just be sure to leave some space at the top of the container for expansion.
  3. Adjust the amount of sweetener to your taste. Some people may prefer a sweeter or less sweet jam.
  4. Enjoy your sugar-free cherry jam on toast, yogurt, or as a topping for desserts!
