Cake Batter Ice Cream - Milk Only Base

Feel free to use one type of milk. I combine almond milk and skim milk to make it less calories without sacrificing the consistency and taste.

Ingredients
  

  • 60 ml/gram Unsweetened - Almond Milk
  • 240 ml/gram Skim Milk 0%
  • 1 tsp McCormick - Cake batter extract
  • 0.5 tsp Xanthan Gum or Guar Gum Optional but helps create a creamy consistency

Equipment

  • 1 Icecream Machine Ninja CREAMi preferably

Method
 

  1. In a blender, food processor, or immersion blender: combine all ingredients except 20 grams/ml of the milk and blend until smooth.
  2. Transfer the mix to the container.
  3. Freeze for at least 24 hours.
  4. When ready, use the light ice cream setting on the Ninja CREAMi machine.
  5. After the cycle is done, take it out of the container and add the remaining 20 grams/ml of milk.
  6. Now use the respin setting on the Ninja CREAMi machine.

Notes

 
Top with sprinkles! Only an additional 8 calories for 2 grams.
Helpful tip: Some people find it becomes creamier if you let the mix sit out at room temperature for 10 minutes before using the machine.
