Stuffed Bell Peppers

Customize this recipe by adding mushrooms and rice or cauliflower rice to the ground beef mix. For a quicker dinner, substitute the spices for taco spice.

Ingredients
  

  • 113 gram Ground Beef93% Lean 7% Fat
  • 240 gram Green bell pepper
  • 1 Tbs Parsley, Fresh
  • 30 gram Onion
  • 1 clove Garlic
  • 0.5 teaspoon Basil, dried
  • 0.5 teaspoon Italian Seasoning
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Ground Cumin
  • 0.25 teaspoon Salt
  • 60 gram Tomato Sauce
  • 28 gram Velveeta Shredded Cheese

Method
 

  1. Preheat oven to 350 degrees F.
  2. Slice the bell peppers in half and discard the seeds.
  3. Wash and mince the fresh herbs.
  4. In a non-stick skillet, cook the ground beef, onion, and garlic until beef is no longer pink and onion is translucent. 
  5. Stir in spices, tomato sauce, and water. Bring to a boil then reduce heat and let the mixture simmer for about 10-15 minutes. 
  6. Spoon the meat mixture evenly into the peppers. Place them upright in a baking pan just big enough to hold them all upright and sprinkle with cheese. 
  7. Bake for 25-30 minutes and serve while still hot.
