Baked Meatballs

Makes 22 big meatballs for only 11 calories each. Serve with zoodles, quick pasta sauce, a salad, or mashed potatoes

Ingredients
  

  • 225 gram Ground beef – 96% lean 4% fat 225 gram
  • 80 gram Eggplant
  • 100 gram Mushrooms
  • 40 gram Raw – Onion
  • 0.25 tsp Xanthan Gum 1 gram (can be substituted with cornstarch)
  • 0.5 tsp Salt 1 gram or to taste
  • 0.5 tsp Black pepper

Method
 

  1. Preheat oven to 400 F.
  2. Dice the vegetables into small pieces.
  3. Cover a baking sheet with parchment paper.
  4. Combine spices, ground beef, Xanthan Gum, and vegetables, in a large bowl.
  5. Add water in increments of one tablespoon until the meat is slightly sticky.
  6. Shape meatballs with a spoon and place them on the baking sheet.
  7. Bake in the oven for 10-15 minutes or until done.
