Ingredients
  

Cherry filling
  • 400 gram Fresh Red Cherries or canned tart cherries
  • 15 gram sugar
  • 4 gram Cornstarch
Bar – crumbly mixture
  • 80 gram All Purpose Flour
  • 80 gram Whole Wheat Flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking powder
  • 120 gram Rolled Oats
  • 26 gram Corn Flakes – such as Kellog's
  • 50 gram Brown sugar
  • 40 gram Granulated sugar
  • 120 gram Butter Softened, not melted
  • 120 gram Unsweetened Applesauce
  • 10 gram NuNaturals – Oat Fiber optional

Method
 

  1. Make cherry pie filling by combining cherries and sugar in a saucepan over medium heat. Stir frequently for about 5 minutes.
  2. Mix cornstarch with a couple of tablespoon water and add in cherry mix.
  3. Let simmer over medium heat for another five minutes until it has thickened into a jam filling consistency.
  4. Let cool.
  5. Preheat oven to 350°
  6. Line a 9×9 inch square pan or a 13*9 inch square pan with parchment paper.
  7. Place all bar ingredients into a bowl and combine until it is a soft crumbly mixture.
  8. Take 2/3 of the mixture and pat it on the bottom of the pan.
  9. Spread cherry filling over the mixture. Make sure that you do not add too much liquid but only use the cherry jam like filling.
  10. Crumble the rest of the mixture over the cherries.
  11. Bake for 30 minutes or until it is lightly golden.
  12. Let cool before serving.
