- Preheat oven to 425 F. Place 11 muffin liners into a muffin pan.
- Mash one banana until it has the consistency of chunky applesauce and mix it with all the wet ingredients.
- Add all dry ingredients into a bowl, I like to sift them through a colander to make sure there are no lumps. Mix and make a hole in the middle.
- Pour the wet ingredients into the hole and fold in the dry ingredients, do not overmix. It is better that there are some lumps in the batter than overmixing it.
- Scoop batter into muffin liners, I use a tablespoon to make this easier. For each muffin liner, I use about 48 grams of the batter.
- Bake in the preheated oven for 7-8 minutes. Turn the heat down to 375 and bake until finished, around 7-9 more minutes.
