Nachos with more protein and less carbs

Ingredients
Method
- Preheat the oven to 425
- Wash and cut the cauliflower into thin slices
- Lay the cauliflower on a parchment-covered cooking sheet and place in the oven for 20 minutes
- Dice the onion and mince the garlic
- Brown the ground beef, add the onion and garlic 3 minutes into the cooking time
- Add spices to the ground beef and tomato sauce to the ground beef
- Let simmer for 5-10 minutes, add a couple of tablespoons of water if it dries out
- Top the pre-cooked cauliflower with the ground beef mixture and cheese.
- Cook in the preheated oven for 10 minutes or until cheese melts.
- Serve topped with your favorite nacho toppings such as fresh cilantro, radish, avocado, bacon, hot sauce, black olives, cotija cheese, lettuce, or lime wedges
Notes
Feel free to substitute the spice mix with a taco-spice mix for a quicker dinner.
You can also make this meat-free by using the seasoning on beans or on the cauliflower itself instead of the ground beef.
